A new year brings new ingredients to cook with. After filling your guts with processed, rich and salty foods over the festive period you are no doubt (like me) gagging for some fresh home cooked meals, however dieting and cutting things out doesn’t have to mean doom and gloom when it comes to cooking as we can always rely on British soil being good for vegetables, meat and fish. But what should you be cooking with to start off the New Year? Below are my top picks for seasonal ingredients this month.
New Season Leeks – New season leeks hit the shelves this month just in time for hearty stews and bakes. Leeks are one of few vegetables that are at their best during the colder months and because they are packed full of nutrients and antioxidants they are also brill for fighting off winter colds! (ironically I am sitting here snotty and run down as I write this!)
Root Vegetables – January is still very much about root vegetables such as parsnips, carrots and swede; the great thing is these are perfect for bulking out meals in a healthier way and are also cheap and cheerful for if your bank account is holding a grudge after Christmas spending!
Forced Rhubarb – Slightly more tender than the rhubarb grown outdoors in the summer, forced rhubarb is often grown in little sheds around this time of year. As this is a bittersweet vegetable it is perfect served with something slightly more sweet and creamy. Hence the perfect pairing of Rhubarb and custard!
